Winemaking Mil·lennium Dolç is produced by the Spanish grape Garnacha Tinta. Once the vine is losing its leaves and the production of sugar ceases, the grapes are picked in the first two weeks of November. After this the grapes are macerated for about 30 days. Due to the sugar content the fermentation works show and controlled at around 26°C and 28°C. As soon as the alcohol content achieves 15% Vol. the fermentation is stopped with the help of a cooling process and a circulation. Then the wine is matured in French oak barrels for about 10 months. The finished wine is bottled and matured again for one year in the bottle before being released for sale.
Description The wine is cherry- colored to violet with a very strong aroma with ripe, subtly sweet, spicy and creamy notes. Due to the maturing in French old barrels, the wine has a very expressive and creamy flavor with a successful combination of sweetness, acidity and ripe fruit nuances. This wine has the typical aftertaste for that type of grape.
